Model Approved: Easy "One Tray" Dinner

I don't know about you, but I've been eating like it's Christmas time. Being in lockdown has been an interesting one to say the least. Tonight my fire alarm went off in my apartment, forcing everyone out of the 21 storey building and onto the sidewalk. To be honest it was my first time outside since all this started (I was under precautionary isolation due to having worked at an event that had several cases and a death). Anyway I digress. This post is about food! Comfort! Health! It's easy to fall into the habit of "letting yourself go" when the days turn into, one giant weekend with no sign of a work week on the horizon. But stand strong with me friends! We will get through this together!


Sure, you're allowed to have a wine every night of the week, I'm not stopping you if that's what's getting you through all this, but here's a yummy, healthy meal to cook tonight!!


I source my recipes from a vast array of places. My favourite sites include Taste.com.au, Chocolate Covered Katie, Tasty, and my families secret cookbook of recipes passed down over the generations (both Asian and German cuisines!)

This one is easy to follow and to be honest you can mix and match whatever veggies you have on hand.

Preheat the oven to 200C or 400F and gather and wash the following:

Baby potatoes

Cherry tomatoes

Asparagus


Throw them in a lined bakeproof dish and cover with


Lemon rind and juice

Fresh or dried thyme

Olive OIl

Himalayan Salt

Pepper


Lastly add the Atlantic Salmon (or whatever fish/protein you prefer). Make sure everything is coated in the oil/lemon juice mix and pop into the oven for 45 minutes or until cooked. You can spoon the juices over everything halfway through baking, if you want to keep everything moist (not a necessary step though!) Then let cool for a few minutes and serve. This meal goes well with a full bodied white wine!
